Food preservation: how is it affected by temperature and humidity stability?

The improvement of refrigeration technologies has made it possible to extend the shelf life of food, which has a relevant impact on reducing food waste and increasing food safety. This study focuses on analysing the effect of the type of compressor (variable-speed vs. fixed-speed) on the stability of temperature and humidity in the typical showcases where food is stored in supermarkets, and its influence on the food preserved inside them.
